Ingredients:

For the Kibbeh Shell:

2 cups fine bulgur wheat

1 ½ cups warm water

1 pound ground beef or lamb

1 large onion, finely chopped

2 tablespoons olive oil

1 teaspoon ground cumin

1 teaspoon ground coriander

Salt and pepper to taste


For the Rice Filling:

1 cup long-grain rice

2 cups water

1 tablespoon olive oil

1 medium onion, finely chopped

½ teaspoon ground cinnamon

½ teaspoon ground allspice

¼ cup pine nuts, toasted

Salt and pepper to taste


Instructions:

In a bowl, soak the bulgur wheat in warm water for about 15 minutes or until it becomes soft and absorbs the water. Drain any excess water and set aside.


To prepare the kibbeh shell, heat the olive oil in a skillet over medium heat. Add the chopped onion and cook until softened and lightly golden. Add the ground beef or lamb, cumin, coriander, salt, and pepper. Cook, breaking up the meat with a spoon, until it is browned and cooked through. Remove from heat and set aside.


Rinse the rice under cold water until the water runs clear. In a separate saucepan, heat olive oil over medium heat. Add the chopped onion and sauté until translucent. Add the rice, ground cinnamon, ground allspice, salt, and pepper. Stir well to coat the rice with the spices.
